1 cup chopped tomatoes1/2 cup chopped onion1/2 cup fresh/frozen coconut4-5 cloves of garlic3-4 fresh green chilies (optional)1/2 tsp turmeric1/2 tsp red chili powder1/2 tsp cumin
2 cups fresh or frozen peas1 tbsp salt2 tbsp oil1 tsp chopped cilantroÂ
Put the first 8 ingredients in a blender with 1/4 cup of water. Blend it into a smooth paste.Heat oil in a pan and add the spice mixture. Cook for a couple of minutes. Add the green peas and 1/4 cup of water.Season it with salt according to taste. Continue to cook till the peas are soft cooked. Sprinkle with some fresh cilantro.Serve hot over rice or with roti.
Basically it’s a super easy and super quick to make curry recipe which you really need in your life!
If you don’t have fresh or frozen coconut on hand, don’t worry! Make it without any coconut. Simply increase the amount of tomato to 2 cups instead of one cup and you will be fine. It can also do fine without a little bit of cilantro garnish!Â
